Chicken and Rice
Chicken and rice is a super versatile option that will leave you full, but not bored. Add snow peas, fried egg, and a dash of soy sauce for an Asian variety, or grilled peppers and onions for something more mainstream. Rice is really easy to make in large batches (and hard to mess up!). Make it for dinner and bring the leftovers for lunch, or prep some meals early in the week to make your mornings easy! If chicken isn't your thing, you can also add sausage or other veggies for flavor.
A "What's Left in the Fridge" Salad
I have one of these packed in my lunchbox as I write! Salads are a healthy alternative to a carb heavy sandwich and the possibilities are endless! My salad today is a spinach salad with green onion, cheddar cheese, green olives, and fresh strawberries - all things I had floating around my refrigerator. Cutting up a few fresh veggies in the morning is quick and pretty mess-free. Add leftover meat from last night's dinner and you're good to go! Just remember to pack dressing in a separate container to keep your lettuce from getting soggy.
Bonus! Salads are perfect options if you don't have a microwave at the office
Canned or boxed soups are a simple way to go, but I prefer to make my own! My Sunday afternoons are usually pretty wide open, so that's a great time to throw together a big pot of chicken noodle, chili, or tomato basil. I get to pick the ingredients and no preservatives! I just bought a Crock Pot so I have been experimenting with soups in there (look for more Crock Pot recipes to come!). It makes the apartment smell amazing, and with the help of smaller Tupperware, I can portion out lunches for the upcoming work week. Small portions are also super easy to freeze for later if you don't feel like eating soup everyday for a week!
